This minty green apple juice is a light, cleansing way to start your day. This juice is packed with chlorophyll (which is sunshine in a green form that is purifying and healing to our bodies), antioxidants, and good-for-your-blood nutrients for superior health and energy. The apples also contribute a lovely natural sweetness.

This juice will be loved by adults and kids alike. It’s one of my favorites for breakfast.

South Beach Minty Green Apple Juice

Serving Size: 1

Ingredients

1 bunch of celery

2 cups of spinach, packed

3-4 leaves curly green kale

1-2 apples, depending on your taste

1/2 bunch of mint

1/2 teaspoon lime juice, fresh if possible

Directions

Press the ingredients above through your juicer. Some of you may choose to leave out the natural sweetness of the apples and use Stevia instead (I would use no more than 1/8 of a TEAspoon).

Either way, with or without the apples, squeeze a touch of fresh lime juice on top. Pour into a glass with a few ice cubes, and take it to work or enjoy at home!

Notes

  1. Stevia is a plant native to Central and South America. It is 300 times as sweet as sugar, but has zero calories. A little Stevia goes a long way. I recommend the Nu Naturals brand of Stevia in powdered form.
  2. Enjoy any left over mint in the future by removing the stems and freezing just the leaves for future drinks! Sometimes I’ll blend up the mint with some water and make mint ice cubes.
  3. Slice any remaining lime and place in a large carafe with water in your refrigerator for a spa like experience all week long!
